Buying Salmon
Fresh Copper River salmon are available from mid-May through September. The King salmon run begins in May and runs well into June. Kings are usually all sold on the fresh market. Sockeyes also hit the market in May, but run into August. King salmon and Sockeye are promoted heavily at the beginning of the season, but are available for quite some time after the annual buzz settles down. Ask your local fish monger for Copper River salmon if you do not see it after the first couple weeks of the season. It’s available. Depending on the size of the run, some retailers may offer frozen Sockeye throughout the year. Top-notch flash freezing methods produce a top quality product that can be savored year-round. The Copper River Coho (silver) salmon run starts in August and continues through September. Copper River Cohos are reknowned as the last great salmon of the season. At the seafood counter, Copper River salmon can be differentiated by their deep color and dense flesh. Often, the salmon will be tagged with a regional branding tag. It is always a good idea to confirm with the counterperson that the fish is from the Copper River. Often times, salmon will be advertised as CR salmon. CR salmon may be Copper River salmon, but it could also be Columbia River salmon. Always check to be sure. Prince William Sound produces Sockeye salmon, Chum salmon, and Pink salmon. The season for salmon caught in PWS begins in June and runs into September. Each salmon is noted for its own unique texture and flavor.
